Over the River & Through the Woods

Happy week-after-spring-break!
I've been a horrible blogger this past week, what with having company in town and such!
Today's outfit is quite simple but extremely handy for going on a photo adventure (which is what I'm doing today—photos to come)!
I apologize for the lack of posting and am planning to share a few recipes and other goodies later this week.

Tasty Blog Snack

Those of you who know me know that I tend to get on "kicks." This is my new kick.
Last weekend my sister called me raving about a homemade non-dairy ice cream she had eaten at a friend's house, so the first chance I got I Googled the recipe and tried it out.
I've made this (probably) 4 out of the 5 days I've known about it. It's that good (and healthy).
Apparently, frozen bananas can turn out to be an ice-creamy consistency when you put them in a food processor, along with peanut butter and a smidgen of honey.
I'm not a huge fan of honey which means that each time I make it, the amount of honey decreases.
The amounts of each ingredient basically depend on what you want it to taste like.

*Here's the mix-down:
  • 1 large frozen banana—Easiest if you cut into pieces before freezing
  • 1 tablespoon of peanut butter 
  • 1 teaspoon of *honey
Put all ingredients in the food processor, and voila! Faux ice cream!

*Makes one serving

For an extra treat, add chocolate chips; so so yummy!

Spring Break, Where Did You Come From?!

Hello! 
I can't believe that it's spring break already. Gosh, summer is really sneaking up on us! 
Since most are out of school this week, I figured that I would do an outfit post to compliment the warm weather that's been gracing us lately. 
I'm so excited that a lot of this season's two pieces are high waisted. I especially love this black one, it's so classy! 
I just can't wait to slip on light dresses and cute sandals. They're so summer!

Dash of Color

Between these tasseled loafers and the stunning coral satchel, this outfit has a special place in my heart. 
Now that it's spring, I can hardly contain myself when it comes to wanting to buy all things clothing related. 
Now, my goal in posting these outfits isn't for whoever reads it to look at it and then be bummed because they can't afford any of the items (because I sure can't), but for you to be inspired and excited to go shopping because you have in mind what catches your eye.

Waffle-Iron Cookies

Oatmeal chocolate chip waffle-iron cookies have become my new favorite, but I must confess, my first try at baking them resulted in a hot waffle iron mess! 
When made correctly, they taste AM-A-ZING. 
They're a must-have in my opinion, and are super easy to bake if you have a limited amount of time because you can make as many or as little, due to the fact that they only need to be in the waffle iron (depending on the brand) for 1 1/2-3 minutes.


  • Oatmeal chocolate chip waffle iron cookies 


1/2 cup (1 stick) butter

1/2 cup + 2 tbs. brown sugar

2 large eggs

1 tsp. vanilla extract

3/4 cup flour

1/2 tsp. baking soda

1/4 tsp. salt

1 1/2 cups old-fashioned oats

1 cup chocolate chips (I use milk chocolate or semi-sweet)

Mix butter, brown sugar, eggs, and vanilla in a large bowl/mixer.
Once mixed, add flour, baking soda & salt until smooth and then add oats and chocolate chips.
Take a spoon or ice cream scoop and place cookie dough on waffle iron and cook for 1 1/2-3 minutes.

Workout, Anyone?

Okay, I wasn't planning on posting an outfit today but couldn't help myself after today's workout. 
Since becoming addicted to Crossfit Training, I've realized that I actually have a reason to buy "activewear." 
*Correction: cute activewear. 
After seeing Stella McCartney's line for Adidas, I wanted to immediately buy her pieces so that I could work out in them.

We all know that April showers come when we least expect it—when we're getting out our Spring wardrobes, right?
So for those of you who are currently dreading winter layers, throw on a light trench and trek to a coffee shop for some warmth and a good read (The Great Gatsby highly is recommended).
